    GODS HONEST TRUTH I WAS ROLLING AND BREADING MEATBALLS IN A RESTAURANT WHEN I WAS 4 YEARS OLD.MY MOTHER OWNED A RESTAURANT.FROM THERE I MOVED UP TO DISHWASHER THEN PREP COOK,COOK,WAITER ,UNTIL AT 16 I HAD I MANAGED SHIFT.
AT 17 I ENLISTED RIGHT OUT OF HIGH SCHOOL WAS AN INFANTRY AIRBORNE COOK.I IN AIT I WAS A CLASS LEADER AND GRADUATED BASIC AS A CORPORAL.I WORKED AND I DO MEAN WORKED MY WAY UP TO SSG AND ASSISTANT MNGR. OF DINNING FACILITY'S OVER THE NEXT 13 YEARS.
I GOT OUT OF THE MILITARY BECAUSE IT WAS ROUGH ON MY FAMILY AND WENT TO WORK AS ASST. MNGR.OF A SHOONEYS.A LARGE FACILITY WITH 2 COMPLETE LINES IN THE KITCHEN.UNFORTUNATELY IT BURNED DOWN AND I COULDN’T WAIT FOR THE NEW ONE TO BE BUILT.
I WORKED IN A FINE DINING PLACE CALLED ALEXANDER'S IN ATLANTA FOR A WHILE AS SUES CHEF .IT WAS JUST TO FAR AWAY FROM HOME.BUT WE DID MAKE SOME MEAN DUCK DISHES THERE.
I WENT BACK TO WORK AT FORT BENNING.WE PUT ON SPECIALTY MEALS INCLUDING FLAMING KBOBS STEAMSHIPS BAKED ALASKA.GOT INTO THE PAPER A COUPLE OF TIMES FOR IT.YOU CAN FIND I THINK A COPY IN THE BACK UP DOCUMENTS.MY MOTHER WAS GETTING ILL SO I MOVED BACK TO PA.AFTER BEING ONE FOR 20 YEARS.
I THEN TOOK THE POSITION OF COOK SUPERVISOR IN A DIETARY KITCHEN IN WEST READING ON FOURTH AND SPRUCE STREETS.WE DEALT WITH SPECIALTY DIETARY NEEDS LIKE LOW CARB,LOW RES.LOW SALT,NO SALT AND ALERGYS AS WELL AS CALORIE COUNT.IT WAS FINE UNTIL NEW MNGMNT TOOK OVER AND THEY DECIDED TO RPLACE THE GENERAL MANAGER AND THE SUPERVISORS.THEY WANTED FOLKS THAT HAD MORE EDUCATION IN DIETARY NEEDS I HAD ONLY ONE DIETARY CLASS IN COLLAGE.
SO I WENT TO WORK AT THE WEST READING DINER.I WAS THERE FOR YEARS.EVEN AFTER THE NEW OWNERS TOOK OVER.IT WAS 24 HOUR SERVICE .EVERYTHING FROM EGGS AN PANCAKES TO MEATLOAF,FISH AND STEAKS.YOUR AVERAGE DINER.BUT I WAS UNCOMFORTABLE WITH SOME OF THE IDEAS AND BELIEFS OF SOME OF THE PERSONNEL.
AT THIS POINT MY MOTHER WAS VERY ILL SO IT WAS NECESSARY TO TAKE OVER HER FULL SERVICE RESTAURANT LIKED IT BUT I WAS A SINGLE FATHER AND I WAS AWAY FROM HOME WAY TO LONG AND MY DAUGHTER NEEDED MY ATTENTION.AFTER 2 YRS. I SOLD IT.
I WENT TO WORK FOR CHEF ALAN.GREAT GUY.HARD WORKER.I WAS THERE WHEN THEY HAD THE LARGER PLACE ON PENN AVE.EVERYTHING FROM BUFFETS TO WEDDINGS.STUFFED LOBSTER TO VEAL OSKAR TO HOT WINGS AND POTATO CAKES.THEY HAD THEIR OWN CAKE DECORATOR BUT I DO CAKE DECORATING.PHOTOS CAN ALSO BE FOUND IN THE BACK UP DOCUMENTATION.I WORK THEIR AS BROILER COOK AND ALSO CHEF OVER AT HIS PLACE IN THE HOSPITAL.
I STARTED WORK AT FRIDAYS 8 YEARS AGO I WORKED ALL STATIONS ALL SHIFTS INCLUDING THE WINDOW COOK POSITION.I WENT ON VACATION AND ON THE SECOND DAY OF MY VACATION THEY CLOSED THE DOORS.NO ONE TOLD ME UNTIL A WEEK LATER.


         THE GOOD EATZ GREEN CAFE HIRED ME.I WORKED THERE FOR OVER A YEAR.I WAS THE CHEF.I PREPARED UPSCALE MEALS THAT WERE SPECIFICALLY DESIGNED SPECIAL DIETARY NEEDS.DON'T LET THAT FOOL YOU I MEAN UPSCALE.THEY CLOSED THEIR DOORS BECAUSE OF A UNUSUALLY HARD WINTER THAT TOOK ITS TOLL ON MANY SMALL BUSINESSES THIS YEAR.
